Use a whisk to beat the eggs, milk, vanilla, salt, sugar, and cinnamon together. Pour into a shallow dish like a pie plate.
Heat the griddle to a medium high heat. Spray with nonstick cooking spray.
Dip each slice of bread into the egg mixture, flipping to coat both sides. Allow the bread to finish dripping and then transfer over to the hot griddle.
Cook french toast for 2-3 minutes per side until achieving a nice golden brown color.
